To get a perfect tartare, follow these simple steps:
- Defrost the red shrimp slowly in the refrigerator for at least 24 hours.
This step is essential to preserve its quality and consistency. - Light marinade: Place the pulp in a bowl and season with a drizzle of extra virgin olive oil, a few drops of lime juice, finely grated zest and a pinch of Maldon salt. Leave to flavour for 2-3 minutes (no more, so as not to “cook” the pulp too much).
- Plating: Using a round pastry cutter, arrange the tartare in the center of the plate. Decorate with fresh herbs, a few lightly crushed pink peppercorns, and, if desired, edible flowers.
- Finish: Add a drizzle of raw oil and serve immediately, accompanied with croutons or light crackers.
